Yangzhou Fired Rice
Recipe of Cooking Yangzhou Fried Rice:
Ingredients:
1 bowl of cold cooked rice (pre-cooked half to one day in advance would be better)
an egg
chicken breast or chicken leg, 50g
flower mushroom, 10g
sausage, 50g
green peas, 25g
shrimp, 5-10g
lettuce, 25g
Note: The general proportion of rice and the total amount of all other ingredients is 7:3.
Seasonings:
cooking oil; salt; yellow rice wine
Note: The number of ingredients and seasonings above can be adjusted according to one's taste.
Preparation:
1. First beat two eggs in a bowl, and add a little salt, stir well.
2. Peel the lettuce, wash it and cut it into 4mm pieces.
3. Cut the sausage into cubes of any size (preferably small).
4. Cook the chicken breast and let cool. Then cut it into about 4 mm 3 cubes.
5. Soak the mushrooms in warm water for 1-2 hours, then drain and cut them into 4mm cubes.
6. Boil the prawns and cut them into small pieces.
Methods
Step 1: Poach the green peas in boiling water for 5-10 minutes.
Step 2: Preheat the wok. Then add cooking oil and heat to 150 degrees Celsius (300 degrees Fahrenheit). Add the shrimps and fry for 10-20 seconds. Finally, remove and drain.
Step 3: Heat the cooking oil and add diced chicken, mushrooms, lettuce, diced sausage, and boiled green beans. Stir-fry for half a minute. Then pour in some yellow rice wine and salt. Stir-fry for 2 to 3 minutes, then turn off the heat. Take the dish out of the pan.
Step 4: Place the pan over medium heat. Add cooking oil and heat. When the temperature reaches 150 ° C (300 ° F), add the beaten egg and fry for about a minute, until golden brown on both sides, scooping it out and cutting it into small pieces.
Step 5: Add the rice to the pan and stir well so that all the rice is in the pan. Fry for about 2 minutes. Then add the shrimp and stir to combine.
Step 6: Pour the ingredients into the pan, stir well and cook for 1-2 minutes. Finally, add some salt to complement the taste. Turn off the heat and serve on a nice plate.
